Snickerdoodle is a fun word.

My little sister told me about this idea, making snickerdoodle cupcakes.  She's been obsessed with baking and reading baking blogs lately.  We love to collaborate on ideas and trade information.  So today I'm sharing a recipe for Snickerdoodle Cupcakes.
You can use any vanilla cake recipe or even a boxed cake mix.  I used this recipe here (for my warm vanilla cupcakes).

Snickerdoodle Cupcakes:

INGREDIENTS

Cupcakes:

2 3/4 cups of flour
2 Sticks of butter (room temperature)
1 3/4 cups of sugar
4 Eggs
1 cup of milk
1 1/2 teaspoons of vanilla
1/4 teaspoon of almond
1 teaspoon of cinnamon

Preheat oven to 350 degrees F.
Cream the butter until smooth. Add the sugar gradually and beat until fluffy. Add your eggs one at at time. Add your dry ingredients alternating with your milk and vanilla. Original recipe warns not to over beat your mixture.   Bake your cupcakes for 20-25 minutes.

Bake as directed and ice with vanilla butter cream icing (recipe here).  Then sprinkle a cinnamon sugar mixture on top.

For the cookie on top you can use your favorite sugar cookie recipe with the cinnamon sugar mixture sprinkled on top before baking.  I used this recipe here. I made teeny tiny 1 to 1 1/4 inch cookies to top it off.

Enjoy!!

  3. Snickerdoodles are by far my favorite type of cookie. I didn't think they could get any better, but add some frosting and stick them on a cupcake like such, and you have pure dessert bliss. What a great idea! Awesome pictures. I'll have to give this recipe a go.
