Whole Wheat Blue Berry Muffins




1 cup of apple sauce (I used mixed berry applesauce)
1 1/2 cups of whole wheat flour
1/2 cup of unbleached flour
1 tsp of baking soda
1/2 teaspoon of salt
1/2 cup plus 1 tbsp of agave nectar
1 teaspoon of vanilla
1 egg
1 tablespoon of melted butter
2 handfuls of whole oats
honey (optional)


Mix your applesauce, egg, butter, agave nectar and vanilla in one large bowl. In a separate bowl sift your dry ingredients and then add your flour mixture to your applesauce mixture. Mix in your oats and then fold in your fresh blueberries. Scoop  your mixture into a muffin pan with liners and sprinkle whole oats and a drizzle of honey (optional). Bake at 325 degrees for 24-25 minutes. Cool before tasting (hot blueberries will burn just trust me). Adapted from Skinnytaste.

Makes about 18 muffins. I'm going to freeze most of ours and use as needed.



I had been looking for a whole wheat blueberry muffin mix from the store for a couple of months now. I checked our local grocery and health food stores but couldn't really find what I was looking for.  Because I have PCOS and chose to treat it naturally by diet and vitamins for now I have to do my best to eat all wholewheat. Before being diagnosed with PCOS we (Josh, Penelope and I) actually ate mostly wholewheat anyway but now I'm even more careful about it. I was pleased that this recipe turned out great and has a filling hearty texture to it as well. Hope you give it a try because it's actually really great.

  1. These look lovely Erin, will definitely give these a try. As a fellow PCOS sufferer I have also cut out sugar/refined foods so am always on the look out for yummy treats that don't break the rules! I have found Cooking Without by Barbara Cousins has been a lifesaver! x

  6. These sound awesome! And a perfect recipe for me as I too have switched to only whole-wheat and am also trying to avoid refined sugars. Definitely trying these!
